Don't call it a dark roast okay, okay...we won't.<br /><br />how about we call it civitas and say it's "a slightly darker roast with slightly longer development"? yea, that sounds cool<br /><br />in either case, we're excited about this one huck has long believed that we should (or could) be just as proud of our darker & more developed coffees, as we are of our lighter offerings.<br /><br />it just took us a while to find a roast profile that still checked all the boxes for us <br /><br />our civitas blend is meant for the fan of a full bodied coffee with notes of dark sugars, chocolate, toffee, and a great nuttiness -- not unlike our blue orchid blend, but a hair darker than that.
Entre Rios, Nicaragua

It's been a couple years, but Alberto Ramos and his farm, Finca Entre Rios, make their return to Huck! We weren't able to buy Alberto's coffee last season, but this year our friend Alejandro - of CaféNor in El Salvador - helped us reconnect! Alberto named his farm Finca Entre Rios, because it sits between the San Francisco, San Isidro, and Margaritozo rivers. He's been farming his father's farm since his teens, but purchased his own land in 2007. Nicaragua is kinda a weird origin, where it's common practice to wash coffee on-farm, then deliver wet coffee to a central drying facility. In most other countries, it's more common to deliver coffee in cherry on the day of picking, or fully washed and dried. Cherry or dried parchment tends to be a bit easier to control, and in many Nicaraguan drying facilities/purchasing stations, there's a big risk that coffee will sit wet too long before drying, developing defects. This is your stereotypical Ethiopian natural. And we mean that in a good way. Dating ourselves, and getting specific, for those of us who came into coffee in the 2010s, many had that first “aha, I can taste the thing on the bag!” moment with a big, blueberry-forward Ethiopian natural, likely from Idido or Misty Valley in Yirgacheffe. Anasora’s from just over the mountains in Guji, but it just might taste like a trip down memory lane. Ethiopia is the birthplace of coffee, with unparalleled genetic diversity, plus unique terroir and processing that can produce super floral, citric washed coffees and the cleanest, juiciest, most berry- -forward naturals. Over the past few years, we’ve fallen in love with coffees from Timor-Leste (or East Timor) - specifically washed coffees from the Letefoho area and Cafe Brisa Serena network. This is our second year in a row roasting coffee from the Eratoi Farmers Group in the village of Ducurai! Coffees from the Pacific Islands - Timor included - can be round and sweet, but the wet hulled process that’s common in the region - in which the coffee’s protective parchment layer is removed before drying - lends itself to premature fade and vegetal, funky flavors. Familia Ixcamparic, Guatemala
We wanted to call this one “El Jefe,” but Isaias politely shot that one down. Oh well, sometimes humility gets in the way of a good name… Isaias Ixcamparic, along with Pedro Izaias Gonzales, is the co-director of the Aprocafé Atitlán Growers Association in Guatemala, a producer group that’s fundamental to Huckleberry’s roasting. We’ve been roasting coffees from the group for a decade, and singling out coffees from the best individual farms and families for most of those years. Spring is a time for Southern Hemisphere coffees to shine, and we’re excited to roast two coffees from the Rambagirakawa Women’s Group - a delicious + complex washed coffee, plus this big and fruit-forward natural! Rambagirakawa is a subgroup of the larger Dukundekawa Musasa Cooperative, made up of quality-driven female farmers, and this is Huckleberry’s second year roasting coffee from the Rambagirakawa group.
