Xarmant is made from sustainably-farmed, estate vineyards of indigenous grapes from the Arabako Txakolina DO in the verdant Basque Country, close to the Bay of Biscay on Spain’s rugged Atlantic coast. Mauritson Dry Creek Valley Sonoma County Made up from two different blocks of Sauvignon Blanc at Hardie Ranch in addition to a new estate vineyard on West Dry Creek Road. The vines grow upon sand and rock to give this Sauvignon Blanc its signature Sancerre style: bright citrus fruits with wet stone and hints of mineral. Each lot was hand-harvested, whole-cluster pressed and fermented separately to achieve maximum depth and complexity. Olivares (dry farmed/no pesticides) Jumilla, Spain Located in the northeast part of Jumilla, Olivares’s Hoya de Santa Ana vineyard is significantly higher than the rest of the appellation. Sandy soils allow for perhaps the highest percentage of ungrafted vines in Europe. The high elevation leads to extended hang time in the Fall - critical for developing aromatics. Harvest typically begins the 3rd week of October, and finishes in early November! Organic viticulture is employed, and all Monastrell is trained with traditional, labor-intensive, bush pruning. Grapes are harvested by hand. No irrigation is employed.

The grapes are picked specifically for the rosé production, then crushed and immediately pressed to stainless steel tanks for a long, cold fermentation. The wine is blended w? various lots of Counoise, Syrah, and other Grenache lots that were saignée-d. Saignée is a winemaking process where we bleed off a portion of the slightly pink juice from a red must right after crush. This wine is crafted from a blend of Sauv Blanc grapes grown on the rolling hills of Happy Canyon. The component wines are racked one time after fermentation is complete and stored in stainless steel tanks and French oak barrels. 12% of the wine was barrel fermented and aged 4 months in barrels of various sizes – 228L, 265L, and 600L during which the fine lees are stirred. Very little SO2 is used, instead the lees and CO2 from fermentation help protect the wine from oxidation. Aromatically the wine has a plethora of fruits ranging from lime, melon, tropical fruit, as well as a fresh grassiness and minty note. On the palate the profile it taut, with balancing flavors of fruitiness as well as a savory herbaceousness, and lingers on the palate with a touch of creaminess.
